Sheet pan meals are a go-to for easy weeknight dinners. They’re quick and easy to do and clean up is a snap. Cod and broccoli work really well together for a healthy, low-carb, delicious meal.  When baked together, cod and broccoli make a delicious and satisfying meal that is easy to prepare and cook. The mild, delicate flavor of cod pairs well with the slightly bitter, earthy taste of broccoli, and the two ingredients complement each other beautifully. Baked cod and broccoli together makes a rich and savory dish that is sure to please the palate.

Fish. I use cod but you can swap for any white fish such as halibut, tilapia, haddock, snapper. Salmon also works with this recipe too. 

Vegetable. I use broccoli but you can swap for other vegetables. Some good alternatives include carrots, zucchini, asparagus, cauliflower, parsnips, bell peppers, green beans. 

Sheet pans. You can fit the fish and broccoli into one sheet pan but since they cook for different times, you’d have to remove the fish from the pan when it’s done and keep the broccoli baking. I find it easier to keep them on separate sheet pans. 

Ingredients:

Cod:

3-4 filets of alaskan cod (1.4lb total)

2 tspn avocado oil

1 lemon

¾ tspn salt

Pepper to taste

2-3 sprigs of flat leaf parsley

Broccoli:

2 heads of broccoli

2 tspn avocado oil

¼ tspn salt

Pepper to taste

Zester

Steps:

  1. Preheat oven to 400 degrees F.
  2. Zest lemon with a zester. Cut half of the lemon into slices. Chop the parsley. 
  3. Cod. Rinse and pat dry the cod. On baking sheet, coat cod on both sides in oil followed by salt and pepper. Top cod with lemon slices and zest. Add juice from the remaining half of the lemon.  
  4. Broccoli. Cut broccoli down into bite-sized florets and stem into slices. On a separate baking sheet, coat broccoli in oil followed by salt and pepper. 
  5. Bake. Bake cod for 12-14 minutes or until the fish is opaque and flakes. Bake broccoli for 18-20 minutes. 
  6. Garnish the fish with parsley. Serve. 

Note. You can add a side of potatoes or rice for some carbs in this meal.
