Here are two slightly different ways for cooking butternut squash in your oven. This is a basic recipe for cooking butternut squash. This is great for eating as is or using in other recipes.

Ingredients

  • 1 butternut squash
  • 2 tsp of avocado oil
  • ½ tsp salt (note)
  • ¼ tsp pepper (note)

Note: Depending on what you use the butternut squash for, you may wish to omit the salt and pepper. For example, if you use the squash for another recipe, you may want to omit the salt and pepper.

For Mashed Butternut Squash 

Steps:

  1. Preheat your oven to 400 degrees Fahrenheit. 
  2. Cut the squash in half lengthwise and scoop out the seeds with a spoon. Poke holes with a fork on the inside of the squash to help the cooking process. 
  3. Brush with oil and salt and pepper.   
  4. Place the squash halves cut-side down on a baking sheet and bake for about 40-50 minutes, or until the squash is tender. Once the squash is cooked, you can use a fork to scoop out the flesh and use it in your favorite recipes.

For Cubed Butternut Squash 

Steps:

  1. Preheat your oven to 400 degrees Fahrenheit. 
  2. Cut the squash in half lengthwise and scoop out the seeds with a spoon. Peel or cut the rind off. Cut into 1 inch cubes.  
  3. Place squash cubes on a baking sheet. Massage the cubes with oil and salt and pepper.   
  4. Bake for about 40-45 minutes or until squash is tender, turning once halfway through.
