Salmon apple sauerkraut salad is a quick and easy salad for that goes great in sandwiches, salads, or on crackers. This comes together in less than 10 minutes which makes it perfect for really busy days. And there are definitely busy days where making lunch or dinner is the last thing I want to be thinking of.
This dish is similar to the classic tuna salad but with salmon which has the benefits of omega-3 fatty acids. The apples and sauerkraut adds a sweetness, tang, and crunch that goes really well with the salmon.
Sauerkraut: I like to use sauerkraut because it has a nice sour fermented flavor that goes well with salmon but you can substitute for a fermented or pickled vegetable you have on hand. Examples of some things you might try: pickled cucumbers, kimchi, pickled carrots or radishes.
Ingredients
- 1 can (15 oz) salmon
- ¼ cup mayo
- 1 small apple
- ¼ cup chopped sauerkraut
- ¼ tsp salt
- Pepper to taste.
Steps
- Drain salmon from can removing liquid.
- Dice apple into small 1/4 inch pieces
- Combine all the ingredients into a large bowl.
- Serve cold or at room temp
