Ingredients:
Wet:
- 1 cup mashed butternut squash
- 1 cup milk
- 1 egg
- 2 tbsp avocado oil
Dry:
- 1 cup ap flour
- 2 tsp baking powder
- ½ tsp cinnamon
- 1/4 tsp salt
Additional avocado oil for frying
Equipment:
I prefer using a griddle and I recommend using it if you have one. This can fit over two burners and let’s you make at multiple pancakes at at time. If you don’t have griddle a cast iron skillet will work just fine but it will take more time.
Steps:
- Mix wet ingredients in a large bowl. Fold in dry ingredients.
- Set skillet or griddle on medium-low heat. Coat with oil.
- Measure ¼ cup batter. Fry 2-3 minutes per side. The pancake is ready to flip when bubbles start to form.
- Serve immediately with toppings of your choice (e.g. maple syrup, berries).
