This tofu avocado salad dish is completely vegan and it is incredibly filling and delicious. The tofu and avocado is so substantial that it easily replaces a meat dish. I find it so satisfying you may even surprise your meat-eating loved ones. Plus it’s so simple to make; it doesn’t require any cooking at all.
This dish is inspired from a dish I was introduced to from a buddhist temple that I used to volunteer at. The peanut dressing is what pulls it all together and gives the dish savoriness, sweetness, and tang.
Ingredients
- 1 box of firm tofu, cut into ½ inch cubes
- 1 large avocado, cut into ½ inch cubes
- Sesame seeds, for garnish
Peanut Dressing:
- ¼ cup peanut butter
- 1 tbsp rice vinegar
- 1 tsp of maple syrup
- 1 tbsp soy sauce
- ¼ tsp of salt
- 2 tbsp water
Steps:
- Mix dressing ingredients. For thinner dressing add ½ tsp of water. For thicker sauce add ½ tsp of peanut butter.
- Gently layer cubes of tofu and avocado into the serving bowl.
- Drizzle dressing over ingredients.
- Top with sesame seeds for garnish.
